I think the biggest hurdle that I see for mythtv  and other HD PC
capture cards is how are they going get around encrypted HD channel
programming. As it stands the only programming available to a standard
HD cards is unencrypted channels (i.e. Animal Channel, Discovery, Local
programming 4, 5, 7, and 13), all the others are encrypted.  There are
various ways around channel encryption using the set-top cable boxes but
with HDCP and HDMI so comes encryption exchanged between the source and
display, via I2C bus or pins 15 and 16, which mean eventually mythtv
could be locked out from HD content unless a work around can be found.

The best HD capture I've run across for linux/mythtv is the HD
HomeRun...

Stay clear of the pcHDTV cards I've had nothing but problems with them. 

As far as viewing MythTV from other systems in your home you may want to
look at transcoding the HD content first...

That said,  I have a setup very similar to what you are looking to do.
I have a mythtv backend-server that does all the recording, transcoding,
storage of recorded content, music, and xvid converted DVDs.  All
content can streamed to my PCs and entertainment center. I use a Neuros
OSD (http://is.gd/exMd), as well as a Buffalo LinkTheater, to access
server content from the mythtv server to the entertainment center.
