There's no doubt the i386 platform is better supported for all Unices. I feel like I was crazy to even try to learn on mac68k: I was trying to learn Un*x, systems administration, all on the old Mac hardware. Frankly I was bonkers. Given that you can pick up an old Pentium 133 with 32MB of RAM for nothing, or next to nothing, I'd go with that if you want to learn from scratch. You can't learn much without a running system, and if it's really hard to build a running system you run the risk of never learning anything. Which would be a shame. Good luck.
